Golden Wonder Seed Potatoes – A Scottish Classic, Found in Arbroath in 1906

Golden Wonder was found by a Mr Brown of Arbroath in 1906 and has never been bettered for flavour by the people who grow it. It is a late maincrop with a distinctive rough, russet skin over pale, intensely floury flesh, and its dry matter content is among the highest of any variety. That dryness is the whole point: it bakes to a light, mealy interior, roasts and fries beautifully, and makes chips that hold their own against anything. It needs a full season and a little patience.

Planting and Growing:

  • Planting Time: Plant between April and May when the soil temperature reaches 8°C.
  • Sowing Depth: Plant 15cm deep, with 40cm between tubers and 75cm between rows.
  • Growing Tips: A late maincrop that needs the full season. Earth up well and leave it in the ground — lifting Golden Wonder early wastes it.

Harvesting:

  • Harvest Time: Lift from September through October, around 20-22 weeks after planting. Leave two weeks after the haulm dies back to set the skins for storage.

  • Baking: Bakes to a light, mealy interior that needs only butter.
  • Roasting: Crisps hard outside and stays fluffy within.
