Grow Your Own Celeriac Giant Prague
Celeriac ‘Giant Prague’ is a trusted heritage variety that produces smooth, round roots with crisp white flesh. Don’t let its knobbly appearance fool you – underneath lies a vegetable packed with delicate celery flavour that’s perfect for winter cooking. While it needs a bit of patience, growing this versatile root veg is straightforward and rewarding.
Growing Position
- Best Grown In: Open ground or raised beds
- Sunlight: Full sun to partial shade
- Temperature: Hardy down to -5°C
- Soil: Rich, moisture-retentive soil
Getting the growing spot right is key to success. Celeriac loves rich soil and plenty of moisture. In the UK, it grows brilliantly in most gardens and allotments, especially if you can give it a sunny spot with shelter from strong winds.
Sowing and Germination
- Sowing Time: February to March indoors
- Planting Depth: Surface sow, just cover with vermiculite
- Temperature: 15–20°C
- Germination Period: 14–21 days
Seeds need warmth to get going, so start them indoors on a warm windowsill or in a heated propagator. They’re tiny, so mix them with sand for easier sowing.
Planting and Growing Conditions
- Transplanting: May to June, when frosts have passed
- Under Cover Growing: Start indoors then move outside
- Soil Needs: Add plenty of well-rotted compost
- Pot Growing: Possible in large containers (40cm deep minimum)
- Support: No support needed, but remove lower leaves as they yellow
Care and Maintenance
- Watering: Keep soil consistently damp – this is crucial for healthy growth. Never let the soil dry out
- Mulching: Add a thick layer of garden compost around plants, but keep the crown clear
- Crown Care:
- Regularly remove outer leaves as they fall flat to expose the crown
- This helps the root (the part we eat!) grow bigger
- Think of it like giving your celeriac room to grow and breathe
- Feeding: Give a monthly feed with balanced liquid fertiliser
- Leaf Care:
- Take off any side shoots that appear
- Cut away damaged or spotted leaves to prevent disease spread
- Weeding: Keep the area around plants weed-free for best growth
- Pest Watch: Look out for celery leaf miners – remove affected leaves quickly
The secret to growing great celeriac is managing those leaves! As your plant grows, remove the outer leaves when they start to fall flat. This isn’t just tidying up – it’s a crucial job that exposes the crown (the top of the root) and gives it the space it needs to swell into those lovely big roots we’re aiming for. Think of it like giving your celeriac a haircut to help it thrive!
